Zuppa Toscana Soup (Olive Garden Knockoff)



Mmmm. Olive Garden. How I love your soup and salad! Zuppa Toscana has always been my favorite; there is just something about the creamy, slightly spicy broth with chunky potatoes, kale and sausage that is just the perfect combination of delicious!

Now you can go buy a bottle of their dressing, grab a bag of green salad, whip up this soup, and you're on your way to a delicious dinner in the comfort of your own home! Now their breadsticks... That will be adventure I will seek out sometime soon, in the meantime, the Easy Breadstick recipe I have posted previously is pretty darn good itself!
Zuppa Toscana Soup (Olive Garden Knockoff)

3 cans chicken broth
2 cups whipping cream
red pepper flakes (to taste)
salt and pepper (to taste)
1-2 cups kale, chopped
3-4 potatoes, sliced thin
1 lb mild Italian sausage, cooked

Place all ingredients inside slow cooker/crock pot. Cook on high 3-4 hours.
Serve with crackers or breadsticks.

ummm ya. my mouth is watering now... im totally gonna have to make this again this week. The last time I made it was over Halloween. I got the recipe from copykat.com I dont know if you have heard of it, its a glorious site. I love ourbestbites.com too ive gotten a ton of good recipes there :) mmm thanks for sharing your yummy recipes. Im always excited to try new things.

Olive Garden uses Turano brand Par Baked Soft Breadsticks.

You just brush on a little bit of softened butter, sprinkle a little granulated garlic powder, and bake at 350 for 10 minutes or so.

@Mary, yes. I often do it the night before so all I have to do day of is throw it all together. It's a great soup to come home to!

@Evelyn, I'm sorry you had trouble with it. I haven't had any issues -- it's a staple around here! Let me know what trouble you had, and I would be happy to help troubleshoot. I definitely don't want an unhappy cooker!

What kind of whipping cream did you use? Mine curdled in the broth as it cooked and smelled disgusting. :(

I just use the heavy whipping cream -- I've never had it curdle, I'm so sorry you did!!

what if all I could find was heavy cream? will that work? I am scared it will curdled like Jennifer said it did.

I typically warm the heavy whipping cream a bit before adding it in...seems to work well and prevents it from curdling.
